I’ve written before about how much I love my Instant Pot. While I think it’s a convenient way to cook, it’s not always obvious how to convert a traditional recipe into an Instant Pot recipe.
I’ve run into this problem several times when attempting to make corned beef. All of the advice about it seemed to disagree and I wasn’t completely satisfied with my results.
Today for St. Patrick’s Day, I finally made a delicious corned beef in the Instant Pot! I thought you might enjoy this simple recipe for a delicious meal. Next time I make it, I’d add a photo so you can see how good it looks!
Simple Instant Pot Corned Beef & Cabbage
- 3-4 lb Corned Beef Brisket (with spice packet)
- 1 Onion, quartered
- 4 cups Water
- 1 lb Carrots
- 1 head Cabbage
Cut corned beef into 4 pieces, crosswise.
Add corned beef, spice packet, water, and onion to the Instant Pot.
Seal the Instant Pot and turn on with meat setting (or 55 minutes at high pressure).
Allow the Instant Pot to naturally release for at least 20 minutes. Release any remaining pressure. Remove meat and allow to rest, covered.
Add carrots and cabbage to the liquid in the Instant Pot. Reseal the pot and turn on for 7 minutes at high pressure. When it’s finished, quick release the pressure.
